My Cheesy potato and sausage soup. Super easy, delicious and done in under 30minutes.
Yields approximately 6 servings
4 Cups chicken broth
1 cup Heavy cream
4 Cups frozen hashbrown potatoes (I used the shredded kind but you could do cubes too)
8oz of shredded white cheddar cheese
12oz of smoked kielbasa sliced in quarters
2 garlic cloves minced
Parsley flakes
Ground pepper.
Add all ingredients into a large pot (you can lightly spray the pot if its not a
non stick pot so that way the cheese or cream doesn't stick as it cooks), bring to a boil stirring occasionally until cheese has melted and soup is thoroughly heated. Add extra parsley to garnish.
You can also do this in a crockpot but it takes a few hours to melt the cheese that way but is great for a dump and forget about it kind of meal!
